Sweet and tangy chicken

4-6 boneless skinless chicken breasts
1 package dry french onion mix
1 (8oz) bottle russian dressing
1 small jar apricot preserves or 1/2 cup

Mix all ingredients together except chicken. Place chicken in a baking pan. Sprinkle with pepper. Pour sauce over the chicken. Roast 400 degrees 1/2 hour-1 hour or til no longer pink.

Puppy Chow

1 cup peanut butter
1/2 cup butter
2 cups chocolate chips (whole bag)
1 teaspoon vanilla
11 cups crispix cereal (whole box)
3 cups powdered sugar

combine peanut butter, butter, and chocolate chips in a saucepan. stirring constantly over med-low heat. After its melty, add vanilla. place crispix in a large bowl. pour over chocolate mixture. mix together until its well coated. place 1 cup of powdered sugar in a gallon size ziplock, with 1/3 of the cereal mixture. shake to coat. pour into resealable container. repeat twice.

Slow cooked Italian Beef

3-4 pounds chuck roast
16 oz jar of Italian giardiniera
12 oz jar of pepperoni peppers
1 package zesty Italian salad dressing mix
1 Tablespoon minced garlic
2 beef bouillon cubes
2 cups water
1 small onion sliced

Add all ingredients in a slow cooker. Cover and cook on low 10-12 hours. or until meat is tender. Take meat out of the slow cooker, and remove fat. Return to the slow cooker for 1 hour.

Very delicious! My husband loves Italian dressing so I wanted to do something different with it.

Traditional chicken enchiladas

3 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
3-4 cups shredded chicken
19 oz can enchilada sauce
flour tortilla shells

preheat oven to 375 degrees. In a casserole dish, pour 1/4 cup enchilada sauce coating the bottom of dish.  Place chicken, cheddar cheese, and 1/2 of the can of enchilada sauce in a medium saucepan. Simmer until cheese is melted. Place 1/4 cup of chicken mixture on a tortilla shell, spread evenly and roll. Place in prepared casserole dish. repeat until casserole is full of "tacos". Cover with remaining enchilada sauce, spread evenly. Top with mozzarella cheese. Bake 15-20 minutes.

This is great if u wanting traditional enchiladas. But creamy enchiladas are so much better. and soon Ill add my husbands recipe for spicy enchiladas. That cant be beat!

Creamed Chicken

1 pound boneless chicken breast
1 Tablespoon oil
1 can cream of chicken soup
1 cup water
1 teaspoon salt
2 teaspoon pepper
1 teaspoon garlic powder
1/2 cup sour cream

In a medium size skillet, saute chicken until no longer pink. Dice into bite-size pieces, and return to skillet. Add oil, soup, water, salt, pepper, and garlic powder. Bring to a boil. Remove from heat. Stir in sour cream.  Serve over toast, biscuits, rice, or pasta.

homemade pepperoni and mushroom pizza

1 1/2 cups warm water (110 degrees)
1 package dry yeast
1 teaspoon salt
3 cups flour
3 Tablespoons melted shortening
1 teaspoon sugar

Dissolve yeast in warm water with salt and sugar. Add 2 cups flour, beat well. Add melted shortening, mix well. Add 1 cup flour, mix well. Knead on floured surface. Place dough in oiled bowl. Let rise 30 minutes. Makes 2 medium crusts or 1 large crust. Top with pizza sauce, mushrooms, pepperoni, and cheese.  Bake at 450 until cheese is melted and golden brown crust.

Homemade Sloppy Joes

1 pound ground beef
1/2 cup chopped onions
1/2 cup chopped bell peppers
1/2 teaspoon garlic powder
1 teaspoon yellow mustard
3/4 cup ketchup
1 Tablespoon brown sugar
salt and pepper to taste

In a medium skillet, fry hamburger, onions, and peppers. Drain grease. Add garlic, mustard, ketchup, and brown sugar. Mix. Reduce heat and simmer 30 minutes. Season with salt and pepper.

This is the best sloppy joes you will ever have. This is a recipe I played with many times until I got it perfect!

BBQ chicken quesadillas

2 boneless chicken breasts
2 cups BBQ sauce
4 flour tortilla shells
oil
shredded cheddar cheese
salsa
sour cream

Place chicken breast in a crockpot. Cover with BBQ sauce. Cook on low for 8 hours or high for 4 hours. Remove chicken and shred. Return chicken to the crockpot and coat with BBQ. Divide BBQ chicken between two tortilla shells. Top with shredded cheddar cheese. Put a second shell on top. Heat oil in a skillet over medium heat for 3-4 minutes on each side until golden brown. Serve with salsa and sour cream.

Hamburger steak with country gravy

Steak:
1 pound hamburger ( divide into 4 patties)
1 teaspoon salt
1 teaspoon pepper
3/4 cup flour
1/4 cup milk
1 egg, beatened
1/4 cup shortening
Gravy:
1/4 cup butter
1/4 cup flour
1 teaspoon salt
2 teaspoons pepper
2 cups milk

Combine salt, pepper, and flour together. Set aside.  Combine egg and milk. Dredge hamburger patties in flour mixture then coat in milk mixture. Dredge in flour mixture again. Heat shortening in medium size skillet over medium high heat. Fry 2-3 minutes on each side until golden brown. Remove and keep warm.
Melt butter in skillet drippings.  Add salt, pepper, and flour. Cook slowly on medium heat, stirring until bubbly and smooth. Add milk to the flour mixture in the skillet, stir well. Cook gravy on low heat, stirring constantly, until thickness desire is reached. Add a scoop full of gravy on top of warm steaks.

Rachel's eggs

6 eggs (scrambled)
6 Tablespoons margarine (divided)
4 slices of bacon (fried crispy and crumbled)
1/2 onion (diced)
1/4 green pepper (diced)
5 fresh mushrooms (sliced)
4 slices swiss cheese

In a large size skillet, Melt 3 Tablespoons margarine, add vegetables and saute over medium heat stiring occasionally. Meanwhile, In another skillet, melt 3 Tablespoons margarine. add scrambled eggs. cook on medium heat, scrambling constantly until eggs are firm. divide scrambled eggs between 2 plates, top with veggies. add 2 slices swiss cheese to each plate. Microwave to melt the cheese slightly. top with bacon.

creamy chicken enchiladas

1 Tablespoon butter
1 can rotel with chiles (drained)
1 (8oz) package cream cheese (softened and cubed)
2 cups cooked and chopped chicken breast
8-  8" flour tortilla shells
2 cups shredded monterey jack cheese
1 pint heavy whipping cream

Preheat oven to 350. Spray a 9" x 13" with cooking spray. Melt butter in a large skillet over medium heat. Add rotel and saute for 2 minutes. Stir in cream cheese and chicken, stirring until melted. Remove from heat. Spoon 3 Tablespoons of chicken mixture in shell and roll. Place seam down in pan. Repeat with the remaining shells. Sprinkle with cheese, and drizzle cream over the top. Cover with foil. Bake in preheated oven for 30 minutes. Take off foil. and cook 15 minutes longer until golden brown.

Absolutely delish! A nice change from the traditional tomato base enchiladas!

Rachel's Savory Burgers

1 pound ground beef
1/2 fresh onion (minced)
5 fresh mushrooms (minced)
4 slices of bacon ( fried crisp and crumbled)
1/2 cup shredded cheddar cheese

mix all ingredients together, using your hands. shape into patties. fry in a frying pan over medium. cook until  done according to your tastes. ( I like mine well done) serve on buns. top with cheese if desired.

Fried cabbage & potatoes

1- head of cabbage
3- medium sized potatoes
1/4 cup oil
1/4 cup butter
1 teaspoon garlic powder
1 teaspoon salt
2 teaspoon pepper


Remove outside leaves from cabbage and discard. Rinse head of cabbage in cold water. Remove whole leaves from cabbage. Discard the core. wash, peel, and slice potatoes. In a large skillet, over medium heat melt butter with the oil. Add potatoes and cabbage leaves. Cover. Cook on medium heat for 20 minutes, stir occasionally. Add spices, stir to coat. If its dry add more oil. Cook additional 10 mins, or until veggies are tender.

Rich and buttery cake

Ingredients:
Cake:
Vegetable oil cooking spray
1 (18.2- ounce) package yellow cake mix
1 large egg
1/2 cup (1 stick) butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
2 large eggs
1 teaspoon vanilla extract
1 (1 pound) box confectioners’ sugar
1/2 cup (1 stick) butter, melted
1 cup toffee bits

Preheat the oven to 350 degrees F. Spray a 13 by 9 by 2-inch baking pan with vegetable oil cooking spray.
In the bowl of an electric mixer at medium speed, combine the cake mix, egg, and butter and mix well. Pat evenly into the bottom of the prepared baking pan and set aside.
In a bowl, mix together the cream cheese, eggs, vanilla extract, confectioners’ sugar and butter. Beat on medium speed until smooth. Fold in the toffee bits with a spatula.
Pour the filling over the cake mixture and spread it evenly. Bake until the center is just a little bit gooey, about 40 to 50 minutes. Remove from the oven and allow to cool completely. sprinkle with powdered sugar
Cut into pieces and serve

Grilled peanut butter sandwich

2 slices of bread of choice
1/4 cup peanut butter or enough to make a peanut butter sandwich
butter or margarine

make a peanut sandwich as you usually would, be spreading peanut butter on the slices of bread. over medium heat, in a frying pan, add a little butter or margarine. spread some more butter or margarine on the outside of the peanut butter sandwich. fry in the frying pan til both sides are golden brown.

this is a delicious treat! also good with jelly or jam in it. or even a little chocolate syrup.

Creamy cauliflower

1 fresh cauliflower head (washed and seprated into small bunches)
1 cup sour cream
2 Tablespoons red pepper flakes
1 Tablespoon garlic powder
1/2 Tablespoon onion powder
1/2 Tablespoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon pepper

In a medium saucepan, fill half way with water and bring to a boil. Reduce heat to Medium. Add cauliflower and cover with a lid. cook 15-20 minutes or until cauliflower is tender. Drain. Mash cauliflower with a fork, and add sour cream and spices. You can add more or less spices according to your tastes. If its not creamy enough, add more sour cream or a dash of milk. It should look similar to mashed potatoes.

Italian parmesan chicken

4 boneless chicken breasts
2 cups italian bread crumbs
1 cup parmesan cheese
1/2 cup melted butter

Preheat oven to 350. Mix together italian bread crumbs and parmesan cheese. Coat chicken in butter then crumb mixture. Place on a greased cookie sheet. Bake 1 hour or until juice are clear.

Bow tie pasta with creamy mushroom sauce

4-6 oz. Bow Tie Pasta
1 1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1 Tablespoon butter
4 oz. crean cheese (cubed)
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup milk
2 Tablespoons chives

In a med saucepan,  add pasta. Cover pasta with water. Cook over med heat stirring occasionally. In another saucepan, cook onion and mushrooms with butter until tender. Stir in cream cheese, salt and pepper. Cook and stir constantly until cheese is melted. Gradually add milk and chives. heat through. Drain pasta. Pour sauce on pasta. Toss to coat. Serve Immediately!

citrus glazed ham steaks

2 fully cooked ham steaks
1/3 cup yellow mustard
1/4 cup honey
1/2 teaspoon
grated orange peel

Combine mustard, honey, and grated orange peel in a small bowl. Brush on to ham. Grill or pan fry. ENJOY!

Crockpot Chicken and noodle soup

2 large boneless chicken breasts
10 cups water
10 teaspoons chicken base
spaghetti noodles
chicken seasoning
onion powder
garlic powder
salt and pepper

In a large saucepan, combine water and chicken base. bring to a boil, until chicken base is dissolved.  add chicken. reduce to medium heat. boil 15  mins. or until no longer pink. remove chicken and dice into bite size pieces. Add chicken to crockpot. pour chicken broth over the chicken. take a handful of spaghetti noodles and break them intp 1" pieces over the crockpot. then add them to the chicken broth. add desired amount of spices. cook on low for 6 hours.

you can opt for cans of chicken broth if desired instead of water and chicken base. You can also add onion, celery, and carrots if desired. ENJOY!

Cookies and cream cake

Cake:
1 (18.25 oz) package white cake mix
1 1/4 cup water
1/3 cup vegetable oil
3 egg whites
1 cup chocolate sandwich cookie crumbs

Frosting:
3 cups powdered sugar
3/4 cup shortening
1 teaspoon vanilla
2 egg whites
12 chocolate sandwich cookies

preheat oven to 350. Grease 2 round 9 " pans. In a large mixing bowl, combine cake mix, water, oil, and 3 egg whites withan electric mixer for 2 minutes. Gently stir in crushed cookies. Pour batter evenly between the 2 prepared pans. Bake 25-35 minutes. Cool 10 minutes. Remove from pans and cool completely.

To make frosting:

In a small bowl, Blend 1/2 cup powdered sugar, shortening, vanilla, and 2 egg whites. Add 2 1/2 cups powdered sugar slowly until creamy. Frost cooled cakes. place one of the cakes on the other to make a layered cake. Garnish with cookies on the top.

Mushroom and swiss burgers

1 pound hamburger
1 (8 oz) package sliced mushrooms
1 Tablespoom butter or margarine
1 package brown gravy mix
4 slices swiss cheese
4 hamburger buns

In a skillet saute mushrooms with butter over medium heat. while mushrooms are sauteing prepare gravy as shown on package. shape hamburger into 4 patties and fry in a skillet. when mushrooms are tender and gravy is thick, add mushrooms to gravy, and keep warm on low heat til burgers are done. place burger on bun add mushroom sauce then cheese, return top bun.

There will be plenty of gravy leftover, you can save it for another meal, or serve burgers with mash potatoes and gravy. or noodles wirh gravy. I added the extra gravy to Ramen noodles and that was yummy !

Italian garden salad

Salad:
1 head of lettuce ( tear lettuces in bite-size pieces)
1/2 onion (cut into rings)
1 cup whole black olives
1/2 cup crutons
1-2 tomatoes (cut into quarters)
4 oz. cubed cheese of your choice
grated parmesan cheese

 

dressing:
4 oz. vinegar and oil dressing
1/4 Tablespoon basil
1/4 Tablespoon oregano
1/2 Tablespoon sugar

Toss salad ingredients together. blend dressing ingredients together. pour dressing on salad, toss to coat.

absolutely delicious! I used smoked mozzerella and cheddar bacon for the cheese of choice.

Texas Nachos

1 pound tortilla chips
1 pound velveeta (cubed)
1 (15 oz) can chili with beans
1 (15 oz) can chili without beans
2 Tablespoons hot sauce
1/2 cup sliced jalapenos
1/2 cup sliced green onions

preheat oven to 350. place chips on a baking sheet covered with aluminum foil. in a saucepan, heat the velveeta and cans of chili until blended and melted. mix in hot sauce. pour chili mixture over tortilla chips. put the pan in the oven for 5 minutes. remove and top with jalapenos and onions.

this was yummy, but next time I'll make my own chili instead of using the cans.

Slow cooked BBQ chicken sandwiches

3 boneless chicken breasts
2 (15 oz) cans chicken broth
2 (15 oz) cans full of water
1 tsp onion powder
1/2 tsp garlic powder
1 bottle BBQ sauce of your choice
1 pkg sandwich buns

In a pot, add chicken, broth, water, onion powder, and garlic powder. boil chicken breasts in broth 15-20 minutes. take out the chicken and cool. shred chicken with your hands or 2 forks. put chicken and BBQ sauce into the slow cooker. Stir and cook 2-3 hours on low.

It was tasty. but  next time, Ill add some onions and green peppers in it.

Chicken wrap with cucumber cream cheese

1/4 cup diced cucumber
4 Tablespoons softened cream cheese
3 large flour tortilla shells
1/4 pound deli sliced smoked chicken breast

stir cucumbers into softened cream cheese. spread evenly between the 3 tortilla shells. layer with sliced chicken and roll up.

my husband said it needed more chicken, but it was the perfect amount for me
