Slow cooked Italian Beef

3-4 pounds chuck roast
16 oz jar of Italian giardiniera
12 oz jar of pepperoni peppers
1 package zesty Italian salad dressing mix
1 Tablespoon minced garlic
2 beef bouillon cubes
2 cups water
1 small onion sliced

Add all ingredients in a slow cooker. Cover and cook on low 10-12 hours. or until meat is tender. Take meat out of the slow cooker, and remove fat. Return to the slow cooker for 1 hour.

Very delicious! My husband loves Italian dressing so I wanted to do something different with it.

Traditional chicken enchiladas

3 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
3-4 cups shredded chicken
19 oz can enchilada sauce
flour tortilla shells

preheat oven to 375 degrees. In a casserole dish, pour 1/4 cup enchilada sauce coating the bottom of dish.  Place chicken, cheddar cheese, and 1/2 of the can of enchilada sauce in a medium saucepan. Simmer until cheese is melted. Place 1/4 cup of chicken mixture on a tortilla shell, spread evenly and roll. Place in prepared casserole dish. repeat until casserole is full of "tacos". Cover with remaining enchilada sauce, spread evenly. Top with mozzarella cheese. Bake 15-20 minutes.

This is great if u wanting traditional enchiladas. But creamy enchiladas are so much better. and soon Ill add my husbands recipe for spicy enchiladas. That cant be beat!

Creamed Chicken

1 pound boneless chicken breast
1 Tablespoon oil
1 can cream of chicken soup
1 cup water
1 teaspoon salt
2 teaspoon pepper
1 teaspoon garlic powder
1/2 cup sour cream

In a medium size skillet, saute chicken until no longer pink. Dice into bite-size pieces, and return to skillet. Add oil, soup, water, salt, pepper, and garlic powder. Bring to a boil. Remove from heat. Stir in sour cream.  Serve over toast, biscuits, rice, or pasta.

homemade pepperoni and mushroom pizza

1 1/2 cups warm water (110 degrees)
1 package dry yeast
1 teaspoon salt
3 cups flour
3 Tablespoons melted shortening
1 teaspoon sugar

Dissolve yeast in warm water with salt and sugar. Add 2 cups flour, beat well. Add melted shortening, mix well. Add 1 cup flour, mix well. Knead on floured surface. Place dough in oiled bowl. Let rise 30 minutes. Makes 2 medium crusts or 1 large crust. Top with pizza sauce, mushrooms, pepperoni, and cheese.  Bake at 450 until cheese is melted and golden brown crust.

Homemade Sloppy Joes

1 pound ground beef
1/2 cup chopped onions
1/2 cup chopped bell peppers
1/2 teaspoon garlic powder
1 teaspoon yellow mustard
3/4 cup ketchup
1 Tablespoon brown sugar
salt and pepper to taste

In a medium skillet, fry hamburger, onions, and peppers. Drain grease. Add garlic, mustard, ketchup, and brown sugar. Mix. Reduce heat and simmer 30 minutes. Season with salt and pepper.

This is the best sloppy joes you will ever have. This is a recipe I played with many times until I got it perfect!

BBQ chicken quesadillas

2 boneless chicken breasts
2 cups BBQ sauce
4 flour tortilla shells
oil
shredded cheddar cheese
salsa
sour cream

Place chicken breast in a crockpot. Cover with BBQ sauce. Cook on low for 8 hours or high for 4 hours. Remove chicken and shred. Return chicken to the crockpot and coat with BBQ. Divide BBQ chicken between two tortilla shells. Top with shredded cheddar cheese. Put a second shell on top. Heat oil in a skillet over medium heat for 3-4 minutes on each side until golden brown. Serve with salsa and sour cream.

Hamburger steak with country gravy

Steak:
1 pound hamburger ( divide into 4 patties)
1 teaspoon salt
1 teaspoon pepper
3/4 cup flour
1/4 cup milk
1 egg, beatened
1/4 cup shortening
Gravy:
1/4 cup butter
1/4 cup flour
1 teaspoon salt
2 teaspoons pepper
2 cups milk

Combine salt, pepper, and flour together. Set aside.  Combine egg and milk. Dredge hamburger patties in flour mixture then coat in milk mixture. Dredge in flour mixture again. Heat shortening in medium size skillet over medium high heat. Fry 2-3 minutes on each side until golden brown. Remove and keep warm.
Melt butter in skillet drippings.  Add salt, pepper, and flour. Cook slowly on medium heat, stirring until bubbly and smooth. Add milk to the flour mixture in the skillet, stir well. Cook gravy on low heat, stirring constantly, until thickness desire is reached. Add a scoop full of gravy on top of warm steaks.

Rachel's eggs

6 eggs (scrambled)
6 Tablespoons margarine (divided)
4 slices of bacon (fried crispy and crumbled)
1/2 onion (diced)
1/4 green pepper (diced)
5 fresh mushrooms (sliced)
4 slices swiss cheese

In a large size skillet, Melt 3 Tablespoons margarine, add vegetables and saute over medium heat stiring occasionally. Meanwhile, In another skillet, melt 3 Tablespoons margarine. add scrambled eggs. cook on medium heat, scrambling constantly until eggs are firm. divide scrambled eggs between 2 plates, top with veggies. add 2 slices swiss cheese to each plate. Microwave to melt the cheese slightly. top with bacon.
